Pumpkin Cream Cheese Pie

1 unbaked deep dish pie shell

Cheese Layer:

8 oz soft cream cheese

1 egg

1/2 cup sugar

1 tsp vanilla

Pumpkin Layer:

2 cups cooked mashed pumpkin

1/2 cup sugar

1 tsp cinnamon

1/2 tsp ginger

1 cup milk

2 eggs, beaten


Whipped cream

Peanut brittle or

Chocolate Chips

In a 9 inch deep dish pie plate, line with unbaked pastry. Cream cheese until light and fluffy. Blend in egg, sugar and vanilla. Spread cheese mixture into bottom of pie shell. Blend together pumpkin layer ingredients. Pour over cream cheese to form a second layer. Bake at 425 degrees for 10 minutes. Lower temperature to 350 degrees and bake 30-35 minutes longer, or until set.

Garnish cooled pie with whipped cream and crushed peanut brittle or chocolate chips.
